Yummy!

I am a firm believer in soup. It obviously exists and it is seriously delicious while also being extremely inexpensive. Usually by the time you have eaten the whole pot for several consecutive meals you will hate that soup and will need another on hand. The good news is, that hatred subsides and you can return to said soup at a later time. I would like to use this blog as a forum for soup lovers, unemployed or not. Please feel free to email me (erinleighbrownATgmail.dot.com) with recipes, photos of your creations and any ideas on cheap eats that can be made in a large pot. Here is the first of many delicious baby food-like treats for your poor, yet discerning palate. 
BUTTERNUT SQUASH AND BROWN BUTTER SAGE SOUP
1 large butternut squash
1 bunch of sage (10-12 leaves. the more the better, really)
2 TBS of butter (if you want to turn the soup into liquid crack and you're skinny, add more)
1 box (4 cups?) stock (i use veggie but feel free to meat it up)
salt and pepper (to taste, as they say)
Halve the squash and bake it for about an hour on a cookie sheet. I like to sprinkle mine with olive oil, salt and pepper. Let it cool. Meantime, melt the butter in a soup sized pot. When it's foamyish add the sage and stir it until it smells like magic and turns slightly brown. If you time this right you can then add the squash straight away. Scoop out the guts of the squashy beast and add them to the pot. Stir the pasty creation that you now have. Add the stock and heat for about 5 mins. Let it cool for a few minutes and add it to the blender without that middle piece in the lid. Instead cover that hole with a kitchen towel. Blend it until your blender starts to smell like a burning motor (maybe that's just mine). Dump it back in the pot and try not to eat it all standing up in the kitchen.
These sound like inexact instructions but that is because this soup is really that hard to mess up. And it tastes yummy with toasty pitas or sprinkle with crushed hazelnuts and other accouterments you may have laying around. Yummy!
